CAPSICUM EGG CUPS:

 

3 Assorted Capsicum (green, red, yellow)

6 Eggs

6 Cherry Tomatoes

Fresh Basil - chopped

Salsa

Cheddar Cheese

Spinach leaves - chopped

4 Champignon Mushrooms

Parmesan Cheese

Salt & Pepper

 

 

 

Heat oven to 190 C. Cut Capsicum in half through the stems and remove seeds and the rest of its guts.

Place on an oven tray lined with baking paper, open side up and bake for 20 minutes.

Remove and crack egg into each half capsicum and season with salt and pepper.

In 2 half capsicum place 3 cherry tomatoes and some chopped basil.

In another 2 capsicum halves, place salsa and top with cheddar

In the last 2 capsicum halves, place spinach leaves and quartered mushrooms and top with parmesan cheese.

Bake for another 15 minutes until the egg whites are set.

Serve with fruits such as kiwi, strawberries and banana.
